GREEN PEPPERS

These are the peppers harvested early when they have not yet reached full maturity. Therefore, green peppers are not a precise variety, they would have turned red or yellow over time.

With their fleshy flesh and sweet taste, they are mainly used as a condiment for first courses but also as a side dish: ideal in the classic “peperonata” but also cooked with other vegetables such as courgettes and aubergines. Given their very high water content and very few calories, green peppers have the greatest cleansing power.
