Usually eaten as a side dish, peas are not really a vegetable, but rather a legume, and should therefore be regarded as a main course in its own right. Delicate and sweet-tasting, peas go well with cereals such as rice, spelt and barley to make tasty warm winter dishes or appetising cold salads in the summer. They can also be added to sauces and ragouts, pies, flans, omelettes and purees. 

Peas are an essential part of the diet due to their content of fibre, proteins, starch, trace elements and many phytochemicals. Other main components are starch and fibre.
