JERUSALEM ARTICHOKE

A poor man’s vegetable which has fallen into disuse, the Jerusalem artichoke has such beneficial properties that it should appear more often on our tables. As well as being eaten raw, it can be prepared in the same way as potatoes: baked, steamed, fried, mashed, but also as an ingredient in soups.

Jerusalem artichokes have a taste reminiscent of artichokes. It has many properties, including keeping blood sugar and cholesterol levels under control, helping intestinal motility, preventing the formation of gas, balancing intestinal flora and aiding digestion.

Rich in vitamins A and B, it also contains arginine, which helps the liver and tissue healing.

Curiosity: Jerusalem artichoke is also called “sunroot”, “sunchoke”, or “earth apple”.
