WHITE RICE

An ingredient in so many traditional dishes, white rice is one of the most widely consumed foods. From “risotto alla Milanese” with saffron and “riso alla pilota” with sausage, typical of the Lombard tradition, to “risi e bisi”, rice and beans, from Veneto, continuing southwards with more elaborate dishes such as the Neapolitan “sartù di riso” and Sicilian “arancini”. Nutritious, satiating and easily digestible, white rice can be cooked in a variety of ways: Italian style, in risotto, simply boiled and then seasoned with butter and cheese or as a side dish for stews, pilaf, or Asian style stir-fried in a wok.

White rice is a cereal with many beneficial properties. Gluten-free, it can also be eaten by people suffering from coeliac disease.

White rice provides B vitamins and minerals, in particular calcium, iron, phosphorus, potassium, magnesium and selenium.

Highly digestible and rich in starch, in the right quantities, white rice is also perfect for slimming regimes.
