PITTED BLACK OLIVES

A must in Greek salads and spicy tomato sauces, pitted black olives also go very well with fish, for example in dips - together with capers, tomato and oregano - for stewed cuttlefish and cod. Black olives are riper and with more texture than green olives. This is why they also differ in their caloric intake: 140 calories for green olives compared to 235 calories for black olives (both referred to 100 grams of product).

Both types of olives are rich in antioxidants, a good source of vegetable iron and vitamin E, keep cholesterol at bay, aid digestion and stimulate the appetite.
