Similar to onions but much more delicate, shallots are used in mirepoix, as a base for soups and risottos, but also in salads, omelettes, sauces and pies. It is a good alternative to the onion in making dishes lighter and with the advantage of causing less bad breath.
Rich in potassium, calcium and magnesium, it contains protein and a good dose of vitamins A, C and the B group.
