This variety of broccoli is characterised by its bright green colour and perfect geometric shape. In addition to its delicate taste, Romanesco broccoli is a vegetable with remarkable beneficial properties. It can be steamed, stir-fried, batter-fried or used as an ingredient in soups. But it is also an excellent condiment for pasta or the ingredient for tasty flans.
It contains 92% water and a small amount of fibre and proteins. It also has a good concentration of mineral salts, while vitamins include C, A and B.
