OYSTER MUSHROOM

Native to the Mediterranean and parts of Asia, the oyster mushroom is the largest species of mushroom in the Pleurotus genus. With its thick, tasty flesh, it is excellent in olive oil, parsley and garlic or grilled. The oyster mushroom boasts many properties: it is rich in vitamins (C, B3 and B9 in particular) and minerals. About 30% protein content makes it ideal for vegetarians.
